Just one? That's a rather difficult choice!

A wrench would be quite useful, though so would pliers. As far as building and dismantling goes. But then again, I've no idea what machinery I'll have access to. I suppose I'll simply say a wrench, as it's quite versatile - and a very difficult tool to simulate or substitute.
